NestFresh Eggs

NestFresh’s Peachy Keen Cinnamon Pancakes

Ingredients: 

  • 1/2 cup plain non-fat yogurt
  • 1/2 cup low-fat (1%) cottage cheese
  • 1/2 tsp. vanilla extract
  • 1 can (8.5oz) sliced peaches in fruit juices
  • 2 NestFresh Eggs
  • 1 Tbsp. firmly packed brown sugar
  • 1 cup buttermilk baking mix
  • 1 tsp. ground cinnamon
  • Vegetable pan spray

Directions:

  1. In a small bowl, stir together yogurt, cheese and vanilla. 
  2. Drain peaches, reserving juice. Chop peaches. Stir into the yogurt mixture. Set aside. 
  3. In 1-quart liquid measure, stir together 1/4 cup of the reserved juice, eggs and sugar until blended. 
  4. In a small bowl, stir together the baking mix and cinnamon. 
  5. Add to egg mixture and stir just until dry ingredients are moistened. (batter will be lumpy.) 
  6. Heat skillet or griddle over medium heat until just hot enough to sizzle a drop of water (380 F. for electric griddle). Lightly coat with pan spray. 
  7. For each pancake, pour about 1/4 cup batter onto the skillet. Cook until bubbles appear on top. 
  8. Before bubbles break, turn and cook on the other side until golden brown. Serve hot topped with reserved peach mixture.

NestFresh’s Baked Pumpkin Oatmeal

Ingredients

  • 2 NestFresh eggs
  • 1 cup milk
  • 1 15-ounce can pumpkin puree
  • Tbsp. honey
  • tsp. vanilla extract
  • ½ tsp. ground nutmeg
  • tsp. ground cinnamon
  • ½ tsp. ground cloves
  • 2 cups rolled oats
  • Extras: Raisins, dried cranberries, pumpkin seeds (if desired)

Directions:

  1. Lightly grease a 9 by 9-inch baking dish. In a large bowl, whisk eggs, milk, pumpkin, honey, and vanilla until well blended.
  2. Fold in the oats and spices. Stir in any “extras,” as desired. 
  3. Pour into the prepared dish and bake in a preheated 350º oven for 30-35 minutes.
  4. Allow to cool for 5 minutes. Top with milk, yogurt, or peanut butter for extra flavor.

In the US, flour is bleached using food additives including chlorine, bromates, and peroxides, which have been banned in Europe and many other countries since the early 1990s. The reason is that these chemicals may cause cancer and were never really intended to be eaten in the first place. Related article here

How can it be possible to receive more from a gift you give someone else than the person to whom you give the gift?
How can we forgive someone who has injured us physically, mentally, emotionally, or in any way?
Our tendency is to dislike or hold an even angrier attitude toward people who wrong us. We feel our negative response will harm them when in reality, it rarely disturbs the person because they didn’t care about us before they injured us.
Grudges and feuds sometimes lasting generations occur because the aggrieved party believes it will hurt their enemy. Again, in reality, the harmed party is most often injured a second time from their bitterness.
